There are a lot of milk variants out there which make them have differences in their usage too. Milk are usually used for a lot of stuffs, suchas for baking purpose, to be drunk directly, to cook savory foods like pasta for example, and many more. Perhaps the ones you see the most in your daily life are UHT, evaporated, and condensed milk. For UHT milk, they would go through a pasteurization process in order to get rid of the microbes or bacteria in the milk. So, what are the differences between evaporated and condensed milk?
Maybe you are more familiar with condensed milk, as you would usually see them being used as a complement or dressing for certain foods, such as toasts, pisang bakar, or even drinks like tea, coffee, and many more. If you have ever tasted it directly, maybe the first thing that comes to your mind is how sweet it tastes like.
Even though both milks are processed in the same way, evaporated milk does not use additional sugar at all. Unlike condensed milk, where it is made of milk and mixture of sugar that reaches up to 40-50 percent. This makes them not safe to be consumed as a substitute for breast milk, due to the high amount of sugar in the milk. It cannot be used as the main source of nutrition, because it can cause health complications such as diabetes or dental problems. The texture of this milk is generally thick and tends to be yellow or ivory white colored.
This differentiates them from evaporated milk, where evaporated milk tends to be bland, with hints of caramel. The color tends to be darker than usual milk because it goes through a high heating process, making it lose 60% of its water. This milk is usually used for drinks, like tea or coffee. It can also be used for certain sweets ingredients.
As it went through a high evaporation process, the nutrition contained inside the milk would be concentrated, making it have a greater amount of nutrients and calories per its volume unit. These milks are usually packaged inside a can and is able to last long enough if the packaging has never been opened. If they are already opened, it is best to consume within 10-14 days for condensed milk, 3-5 days for evaporated milk. Though if you store them inside a freezer, they will last a few days longer.
